Ingredients  for the salad

4 cups mixed leaves (approx. 120 gr/4.23 oz) 1 medium Lebanese or Persian Cucumber   (approx. 120 g/4.23 oz) 1 large avocado  (approx. 300 gr/10.6 oz)

Ingredients  for the dressing

2 tbsps finely chopped French shallots  2 tbsps wine vinegar 2 tsps Dijon mustard 4 tbsps extra-virgin olive oil Sea salt and freshly ground black pepper

Step 1

Wash the salad leaves and either pat dry or spin dry in a salad spinner. This makes for a tastier. 

Step 2

Wash, trim and peel your cucumber leaving alternate green strips then cut it into rounds. Peel and dice your avocado.

Step 3

Place all the dry salad leaves, cucumbers rounds and diced avocado in a large mixing bowl.

Step 4

Season with sea salt and cracked black pepper. Pour over dressing. Toss well to combine.

Step 5

Taste and adjust flavourings to your liking.  Arrange in a salad bowl, serve immediately.
