Creamy Bacon Dressing

Our Creamy Bacon Dressing is just the thing to entice the carnivores in the family to try some healthy greens! Great on potato salads, slaws, roasted veg and leafy greens.

Equipment

Ingredients

  • 5 rashers bacon (200g/7oz)
  • 2 tbsps bacon fat
  • ¼ cup whole egg mayonnaise (use a low carb mayo such as Primal Kitchen for keto)
  • cup sour cream
  • 3 tbsps apple cider vinegar
  • Sea salt and cracked black pepper

Instructions

  • Heat up your grill (broiler), to medium-high heat.
  • Cut off the rind from your bacon and arrange bacon on a lined baking tray so that the rashers are not touching.
  • Grill until golden and crisp on both sides, and drain the bacon fat into a heatproof container when you turn the bacon around as we are going to use it in our dressing.
  • Allow the bacon to cool then crumble it into bacon bits.
  • Add half a cup of the crumbled bacon to a high-speed blender or small food processor, add the remaining dressing ingredients, season and blitz well to combine.
  • Taste and adjust seasonings according to your liking.

Notes

  • This recipe makes just under one cup of dressing (approximately 12 tablespoons) which should be enough dressing for one large salad that serves 6-8 people. The nutritional information is calculated per tablespoon.
