White Peach Salad with Plums and Mint

Ingredients

  • 500 grams white peaches (approx. 3 large, 18oz)
  • 500 grams plums (approx. 5 large, 18oz)
  • cup mint leaves
  • 1-2 tbsps honey melted
  • ¼ cup fresh lime juice

Instructions

1-PREPARE FRUIT

  • Wash and dry the all the fruit. Start at the fruit’s stem end, cut to the pit, follow the indentation and cut around the pit.
  • Twist both “halves” of the fruit in opposite directions, until they separate and pull apart.
  • With a small sharp knife prise the pit from the fruit, for stubborn pits you may need to cut around the pit to dislodge it.
  • For extremely stubborn pits just slice around the pit in sections until you are able to wiggle the pit free.
  • Slice the fruit into wedges.

2-ASSEMBLE SALAD

  • Wash the mint, shake dry and remove the leaves from the stems.
  • Place the sliced fruit, mint leaves, honey and lime juice into a large mixing bowl.
  • Toss the fruit with honey, lime and mint to combine.
  • Arrange in a platter or bowl and keep,chilled until you are ready to serve.
