This Herby Lemon Dressing is just so fresh tasting, easy to prepare and versatile use it in a multitude of salad combinations and it also doubles as a marinade or dip with sour cream.

Equipment

  • Bullet or High Speed Blender or Small Food Processor

Ingredients

  • ½ cup olive oil
  • cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup soft herbs {I used parsley mint and basil}
  • 1 garlic clove minced
  • Sea salt and cracked black pepper

Instructions

  • Place all your dressing ingredients in a small food processor or blender, season and blitz until combined.
  • Taste and adjust seasonings according to your personal preferences.
  • Store in a glass jar and keep in the fridge for approximately two days until you are ready to use.
