- 1 cup sunflower seeds roasted in the oven til golden
- ½ cup water
- ¼ cup lemon juice
- 1 tablespoon lemon zest
- 1 clove garlic minced 
- Sea salt and cracked black pepper
Preheat your oven to 180F (360F)
Place seeds in an oven tray and roast for 10-15 minutes or until golden brown.
Place your roasted sunflower seeds in your blender and blitz to a powder.
Add remaining dressing ingredients, season and blitz until smooth and creamy.
This dressing should be the consistency of mayonnaise if it is too thick just add some more water to loosen.
Taste and adjust seasonings according to your liking.
Keep it in a sealed container and store in your fridge.
- This will make approximately 1 cup of dressing equal to 16 tablespoons. Enough for a ginormous salad that will serve 8 people.
