Lemon Caper Dressing

Our Lemon Caper Dressing is just the thing to add some zingy flavour to your salads. But can also makes delicious sauce for simple baked or grilled fish, shrimp or chicken.

Equipment

  • Bullet or High Speed Blender or Small Food Processor
  • Sealed container or glass jar

Ingredients

  • cup olive or avocado oil
  • ¼ cup lemon juice freshly squeezed
  • 4 tbsps capers
  • 1 tablespoon lemon zest
  • 2-3 anchovies optional use 2 tsps nutritional yeast for vegan

Instructions

  • Place all your dressing ingredients in a small food processor or high speed blender.
  • Season and blitz until well combined, taste and adjust seasonings to your liking.
  • Store in a sealed container (glass jars are ideal) in your fridge for 4-5 days.

Notes

*It will make approximately ¾ cup of salad dressing enough for 1 salad that serves 4 people. This is approximately 12 tablespoons of dressing and the nutritional values have been set per tablespoon.
