Basil Caper Dressing

Our Basil Caper Dressing is an aromatic, tangy, salty fusion loaded with umami flavour. A great dairy-free alternative to Caesar dressing and perfect on leafy greens, roasted veg, grilled chicken or fish.

Equipment

  • Small Food Processor or High-Speed / Bullet Blender

Ingredients

  • 1 cup basil leaves torn
  • ¼ cup capers drained and well rinsed
  • ¼ cup olive oil
  • ¼ cup lemon juice freshly squeezed
  • 1 cloves garlic minced

Instructions

  • Place all the dressing ingredients into a small food processor, season and blitz until well combined.
  • If it is too thick add 3-4 tablespoons of water to loosen it.
  • Taste and adjust seasonings according to your liking.
  • Pour into a sealed glass container in your fridge and it should last 2 days at the most.

Notes

* This is enough dressing for one large salad that serves eight people or two small ones.
