Salad Ingredients

250 gr /8.82 oz capellini or angel hair pasta ΒΌ cup olive oil, extra virgin 3 long red chillis 3 cloves garlic, minced β…“ cup baby capers, drained 2 tbsps lemon zest

ΒΌ cup lemon juice, freshly squeezed Β½ cup parmesan cheese, grated 1 Β½ cups chopped leaves Sea salt & cracked black pepper

Step 1

Boil water in a large pot, add salt, pasta & some olive oil. Cook al dente 3-5 mins.

Remove chilli seeds and finely dice.

Step 2

Drain capers and pat dry. Strip basil leaves from stems.

Roughly chop basil leaves. Strain pasta and rinse under cold water when cooked.

Step 4

Heat the olive oil on medium heat, add capers, diced chilli, minced garlic & lemon zest.

Stir until cooked and aromatic.

Step 5

Add cooked pasta and aromatics to mixing bowl.

Pour over lemon juice.

Mix pasta well.

Step 5

Add the grated cheese..

Mix through again.

Garnish with chilli. Serve & Enjoy!
