Strawberries and Lime Fruit Salad

Ingredients

  • 750 grams strawberries, fresh (3 punnets, 26.46oz)
  • ¼ cup lime juice, fresh (juice from 1 large juicy lime)
  • 6 leaves kaffir lime, chiffonade
  • 2 tbsps honey, melted

Instructions

  • Melt the honey in a small saucepan and allow to cool slightly.
  • Cut the kaffir lime leaves into ribbons chiffonade style.
  • Add all the the kaffir ribbons, melted honey and lime juice to a small glass jar and shake to combine.
  • Leave to one side to allow the flavours to meld together.
  • First, place your strawberries in a colander and rinse well under gently running cold water, so as not to damage them. Strawberries absorb water easily so that is why it is best to wash and then hull them. Leave them in your colander to drain.
  • Place your cut strawberries, dressing and shredded lime leaves in a large mixing bowl and mix well to combine.
  • Keep chilled until you are ready to serve then arrange in a salad bowl.
