Pistachio Dukkah Recipe

Equipment

  • 1 Small Food Processor or High-Speed / Bullet Blender

Ingredients

  • 2 cups shelled pistachios and almonds
  • ¼ cup

    cup sesame seeds


  • 3 tablespoons coriander seeds
  • 1 tablespoon cumin seeds

Instructions

  • Preheat oven to 200°C/30℉.
  • Spread the pistachios over a baking tray.
  • Place the sesame seeds in a separate baking tray.
  • Place the whole spices on a third baking tray.
  • Bake for a few minutes and then shake the pan. Roast for until toasted, approximately 5-10 minutes.
  • Allow the nuts, seeds and spices to cool, then place the pistachios in a food processor and pulse into small pieces but nut so much that they turn to powder. Remove to a bowl.
  • Put the toasted coriander and cumin seeds in a spice blender or small food processor and blitz to a powder.
  • Add the spices and sesame seeds to the bowl with the pistachios and stir well to combine. 
Store in an air-tight container until ready to use.

Notes

Makes approx. 2 and half cups of Duhhah Blend approximately 39 tablespoons. The nutritional information has been calculated per tablespoon.
