Minty Lime Dressing

Equipment

  • small food processor or bullet blender
  • Glass jar or sealed container.

Ingredients

  • ¼ cup extra virgin olive oil
  • ¼ cup lime juice
  • cup mint leaves
  • 1 teaspoon Dijon mustard
  • Sea salt and cracked black pepper

Instructions

  • Wash the mint, either pat it dry with a towel or spin it dry with a salad spinner, then strip the mint leaves from the stems.
  • In a blender or food processor, combine the olive oil, lime juice, mint leaves, and Dijon mustard.
  • Blend the ingredients until you achieve a smooth and well-incorporated mixture.
  • Taste and season with sea salt and cracked black pepper according to your preference. Adjust the seasoning as needed.
  • Transfer the vinaigrette to a jar or container with a tight-fitting lid.
  • Store it in the refrigerator for at least 30 minutes to allow the flavours to meld together.
