My all-time favourite Festive salad is this sensational Brie Salad with Cherries and Macadamias. Bright green salad leaves, with luscious cherries and buttery honey macadamias and a wonderful gooey brie on top Ahhhh heaven!!!!

Salad Ingredients

200gr/7oz mixed leaves   500gr/18oz cherries  ½ small Brie ¼ cup olive oil, extra virgin  3 tbsps red wine vinegar Sea salt & cracked pepper

Honeyed Macadamia Ingredients

½ cup macadamias  (slightly crushed) 1 tablespoon honey 1 tablespoon butter ¼ teaspoon sea salt

Step 1

Take out your brie from the fridge to bring it to room temperature. Preheat your oven to 170°C (340°F). Line an oven tray with baking paper.

Step 2

Put macadamias honey, butter & salt in a tray. Stir macadamia mix after 5 mins. Roast until golden brown. Allow to cool and break into pieces.

Step 3

Wash cherries and pit, either by hand or with a cherry pitter. Slice them in half.

Step 4

Wash your salad leaves, under cold water. Then either pat dry or spin dry in a salad spinner.

Step 5

Place ingredients in a mixing bowl, add vinegar, oil and season. Mix well to combine.

Step 6

Wash your salad leaves, under cold water. Then either pat dry or spin dry in a salad spinner.
