What Are Capers?
Capers are pickled flower buds that are picked from a shrubby bush before they have flowered. Once picked they are dried in the sun and either brined or packed in salt to preserve them.
If they are allowed to mature they are called caper berries and look like green cherries with stems attached. Caperberries are brined and eaten and served as you would olives or pickles (try them in your next antipasto platter).
Make sure your rinse and drain them well before using them to tone down their briny taste (unless you prefer them that way).
