Ginger is an herb that originated in South East Asia and a member of the Zingiberaceae family along with galangal, turmeric and cardamom.
While most people believe that ginger is a root it is in fact a rhizome which is a type of stem that grows underground.
It has many health benefits and is anti-inflammatory, helps regulate blood sugar, is good for digestion and gastro issues, and great for treating nausea.
What Can I Use it On?
- Sensational on tropical fruit such as mango, dragon fruit, pineapple, papaya and paw paw.
- Wonderful with stone fruit such as peaches, nectarines and cherries.
- Great as a tart topping on sweet ice cream or yoghurt (try the coconut ones ? )
- Stir through cocktails for some tropical flavour, great with vodka and soda! Make sure you strain it first for clearer cocktails.

How to Make It
- Place all the ingredients in a sealed glass container and shake well to combine.
- Taste and adjust ingredients according to your liking. This is quite a tart dressing so if you prefer things a bit sweeter then add some more sugar, honey or maple syrup.
- Pour into a sealed glass container and store in the fridge for 4 days or so.

How Much Does This Recipe Make?
This makes approximately half a cup dressing or 8 tablespoons. This is enough dressing for two large salads that serve eight people each.

How Long Can I Store It For?
Because of the fresh lime this sweet dressing will only keep for approximately four days in the fridge. Make sure you keep it in a sealed glass container and store it in a cool part of your fridge and not on the door.
