More on Capers
Are buds picked from a shrubby bush before they have flowered. If they are left to mature they are then called caper-berries and look like green olives with a stem.
There are two ways of preserving capers either packed in salt or in brine. First they are dried in the sun and then pickled in a either vinegary brine or in salt.
What do capers taste like?
Capers have a tangy, vinegary taste that can be attributed to how they are packaged as they are kept in a briny liquid in order to preserve them. They can be likened to green olives.

- Wonderful on leafy green salads.

Ingredients Needed
How to Make It
- Place all the dressing ingredients into a small food processor, season and blitz until well combined.
- If it is too thick add 3-4 tablespoons of water to loosen it.
- Taste and adjust seasonings according to your liking.
- Pour into a sealed glass container in your fridge.
How Much Does It Make?
Our Basil Caper Dressing recipe makes approximately one cup or 16 tablespoons of dressing, the nutritional information has been calculated per tablespoon.
This is enough for one large salad that serves eight people or two small salads.
How Long Can I Store It For?
As this is a fresh style of dressing with basil that tends to go brown and bitter once it is cut up I would use it up as quickly as possible.
It will only keep for a maximum of two days if stored in a glass sealed container in the fridge.
