Our Basil Caper Dressing is an aromatic, tangy, salty fusion loaded with umami flavour. A great dairy-free alternative to Caesar dressing and perfect on leafy greens, roasted veg, grilled chicken or fish.

Ingredients Needed

LABELLED INGREDIENTS NEEDED TO MAKE BASIL CAPER DRESSING

How to Make It

Place all the dressing ingredients into a small food processor and season

Basil caper dressing ingredients in a blender.

Blitz until well combined, if it is too thick add 3-4 tablespoons of water to loosen it.

Taste and adjust seasonings according to your liking.

Pour into a sealed glass container in your fridge.

What Can I Use It On?

  • Wonderful on leafy green salads.
  • Especially great with bitter, peppery greens such as Rocket/arugula, radicchio and witlof/Belgian endive. 
  • Oh so tasty on tomato salads, slice some gorgeous heirloom tomatoes into rounds and drizzle it on top 
  • Try our Basil Caper Dressing as an alternative dairy-free dressing to use on your Caesar salad.
  • Drizzle it on blanched green beans and brassicas such as broccoli, broccolini, cauliflower or romanesco.
  • Great on grilled asparagus and poached eggs.
  • Sensational mixed in grain salads such as pearl barley, couscous, burghul, or freekeh.
  • Great dip for your meatballs and arancini.
  • Toss it through some sliced cherry tomatoes for a sensational topping on bruschetta.
  • Use it as a sauce on grilled chicken or fish.
  • Great to use in sandwiches or wraps.

Tips and Questions

What Are Capers

  • Are buds picked from a shrubby bush before they have flowered. If they are left to mature they are then called caper-berries and look like green olives with a stem.
  • There are two ways of preserving capers either packed in salt or in brine. First they are dried in the sun and then pickled in a either vinegary brine or in salt. 

What Do Capers Taste Like?

Capers have a tangy, vinegary taste that can be attributed to how they are packaged  as they are kept in a briny liquid in order to preserve them. They can be likened to green olives. 

How Much Does It Make?

  • Our Basil Caper Dressing recipe makes approximately one cup or 16 tablespoons of dressing, the nutritional information has been calculated per tablespoon. 
  • This is enough for one large salad that serves eight people or two small salads. 

How Long Can I Store It For?

  • As this is a fresh style of dressing with basil that tends to go brown and bitter once it is cut up I would use it up as quickly as possible. 
  • It will only keep for a maximum of two days if stored in a glass sealed container in the fridge.

  • 1 cup basil leaves torn
  • ¼ cup capers drained and well rinsed
  • ¼ cup olive oil
  • ¼ cup lemon juice freshly squeezed
  • 1 cloves garlic minced
