This Herby Lemon Dressing is just so fresh tasting, easy to prepare and versatile that you can use in a multitude of salad combinations and can also double as a marinade.

I just love the fresh taste of this easy-to-make aromatic dressing full of fresh aromatic herbs and zingy lemon flavour. It is most definitely a firm favourite in our family.

You Will Need

Labelled ingredients needed to make a herby lemon dressing.

Step-by-Step Instructions

Place all your dressing ingredients in a small food processor or blender and season with sea salt and cracked black pepper.

Blitz until combined, then taste and adjust seasonings according to your personal preferences.

What Can I Use It On?

The simple flavours in this salad suit anything you would care to imagine.

Goes Well With:

  • Any vegetable salad you can think of - try it with tomatoes, cucumbers, avocados, carrots, zucchini, asparagus. Sturdy greens such as kale, chard, silverbeet and spinach, leafy salad greens such as rocket (arugula), bagged greens, and lettuce varieties.
  • Salads with potato, pasta, rice or grains like - couscous, bulgur, ancient grain millet.
  • Cheeses - this is a great dressing to add to salads with cheeses like feta, goat cheese, or  parmesan

Try It With:

  • Greek Salad as an alternative dressing to the red wine vinegar dressing.
  • Niçoise salad for a wonderful zesty boost to a classic.
  • Your next pasta or potato salad as a light and tasty alternative to mayonnaise.
  • Fresh peeled prawns either as a salad or as a dipping sauce.
  • Drizzled over smoky grilled mushrooms.
  • Sour cream as a wonderful dipping sauce for your veggies, just stir it through a small container.

It Can Double as a Marinade

  • Not only is the super easy dressing great for salads but it does a double act and makes a sensational marinade for grilled meats at your next barbecue.
  • Great with chicken, lamb, steak, pork or with fish and seafood.

Can I Use Bottled Lemon Juice?

Stick to fresh lemons for this dressing, bottled lemon juice doesn't match the fresh, vibrant flavour of real lemons bring to this dressing.

How Much Dressing Does It Make?

This recipe makes approximately one cup of dressing enough for a large salad that serves 6, the nutritional information has been calculated per serving.

How Long Can I Store It For?

Keeps covered in the fridge for approximately two days.

Ingredients
  • ½ cup olive oil
  • ⅓ cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup soft herbs {I used parsley mint and basil}
  • 1 garlic clove minced
  • Sea salt and cracked black pepper
Instructions
  • Place all your dressing ingredients in a small food processor or blender, season and blitz until combined.
  • Taste and adjust seasonings according to your personal preferences.
  • Store in a glass jar and keep in the fridge for approximately two days until you are ready to use.
