What is Cajun Seasoning?

We can thank the Acadians for all those delicious Cajun recipes they brought with them when they settled in rural southern Louisiana. They rebuilt and modified the food and dishes they loved with the fresh produce, wild game and spices they found in their new home.

Cajun spice blend is a rustic seasoning from the South (Louisana). As with most spice mixes, everyone has their unique combination of spices, which usually includes paprika, cayenne, garlic powder, onion flakes, oregano and thyme.

Feel free to add salt and pepper to your blend, but I prefer to leave them out for a low-sodium cajun seasoning version. I like to add these separately in my recipes - you have more control that way.

Let's Talk Herbs and Spices

There is really nothing fancy in our blend; you will probably have most of these in your pantry already. So why not whip up your own homemade blend minus the fillers or preservatives you find in most store-bought blends?

  • Paprika and Smoked Paprika - for their vibrant colour, full-bodied flavour, and smoked paprika's wonderful smokiness.
  • Dry Shallots or Onion Flakes - has a sweet, mild onion flavour.
  • Cayenne Pepper - this is what adds the HEAT to our spice blend; adjust to your liking.
  • Dried oregano - adds a sweet, grassy, slight bitterness.
  • Dried thyme - has a strong flavour and savoury pungency.
  • Garlic Granules or Powder - gives a mellow garlic tang.

How to Use Your Cajun Dry Rub?

  • Make into a paste with oil, rub into chicken or meats and roast in the oven or grill on your barbecue.
  • Mix with butter and pan fry for blackened chicken.
  • Marinate chicken fillets with Cajun spice and balsamic vinegar, pan-fry and serve with a crisp green salad.
  • Try Cajun Shrimp and Rice
  • Sauté onion, different coloured peppers, and corn kernels with some 1-2 teaspoon Cajun seasoning; add some Arborio rice, stir until rice is well coated with spice mix, add some stock and cook risotto-style.
  • Serve with diced avocado, fresh coriander and lime wedges.
  • Add it to dressings or vinaigrettes to add some pizzaz to your salads.
  • Stir it through your dips for a zingy hit - try with hummus, guacamole or even tzatziki.
