For perfectly consistent slices and juliennes, a mandoline or a v-slicer is a great tool for every kitchen. Ideal for shredded coleslaw, cucumber ribbons or perfect radish disks it is an extremely versatile tool.

They range in price from $30-$100, so it really just depends on your budget and taste.

They are available in either plastic or all-metal frames with a variety of blade types - straight, v-shaped or diagonal steel blades. It is up to you if you prefer the handheld or the ones with the fold-out legs.

The handheld versions are great for holding over bowls or plates and the ones with the fold-out legs I find are more stable. They all come with safety guards to keep your fingers safe. If using the guard is too awkward you could try using a cut-resistant glove.

I would choose one that allows you to easily adjust the thickness of your slices and one that has a julienne attachment as you will find it much more versatile.

Difference Between Mandolines and V-Slicers

Below are the main differences and similarities to help you choose the one that suits your kitchen the best.

1. Blade Design

Mandoline

  • It has a flat, horizontal platform with a straight blade that can be adjusted to different thickness settings.
  • The blade runs parallel to the slicing surface, and users can produce consistent, uniform slices by sliding the food back and forth across the platform.

V-Slicer

  • It has a V-shaped blade configuration, which is set at an angle.
  • This design allows for a slightly different cutting motion compared to mandoline slicers.
  • The V-shaped blades are often adjustable to create different thicknesses and can be used to achieve a variety of cuts.

2. Cutting Motion

Mandoline

  • The cutting motion with a mandoline is generally back-and-forth or up-and-down, depending on the design.
  • The food is moved across the flat surface of the slicer to produce slices of consistent thickness.

V-Slicer

  • V-slicers typically involve a diagonal or rocking motion as the food is pushed down and across the V-shaped blades.
  • This rocking motion can be more ergonomic for some users.

3. Versatility

Mandoline

  • They are versatile and can be used for a range of slicing techniques, including straight cuts, crinkle cuts, and julienne.
  • Some models may also have interchangeable blades for different cutting styles.

V-Slicer

  • V-slicers are versatile as well, allowing users to create various cuts such as slices, julienne, and even waffle cuts.
  • The V-shaped blade design adds a level of versatility to the types of cuts that can be achieved.

4. Safety Features

Mandoline

  • Many mandoline slicers come with a handguard or food holder that helps protect the user's fingers from the sharp blades.
  • The flat design can make it easier to use the handguard effectively.

V-Slicer

  • V-slicers often have a built-in handguard that fits the contour of the V-shaped blades, providing safety for the user.
  • The rocking motion can also contribute to a safer slicing experience.

5. Portability

Mandoline

  • Mandolines come in various sizes, but they are generally more compact and easier to store than some V-slicer models.

V-Slicer

  • V-slicers may have a bulkier design due to the V-shaped blades, and their portability can vary depending on the specific model.

Choosing between them often comes down to personal preference and the specific features that align with your culinary needs.
