How to Make It

  • Taste your sumac before adding it to your dressing; it has quite a tangy flavour. 
  • If you feel it is too intense then just add a pinch at a time so that your vinaigrette will not turn out too puckery.
  • If you have added too much, then adjust by adding a bit of honey or maple syrup. 
  • Place all vinaigrette ingredients in a glass jar or sealed container and season.

  • Shake well to combine, taste and adjust seasonings according to your liking.
  • If you feel that your sumac vinaigrette is a bit puckery, then adjust with a ¼ to ½ a teaspoon of honey or maple syrup.
  • Store in the fridge in a sealed glass container and it should last for approximately one week.

What Can I Use Sumac Vinaigrette On?

  • A great vinaigrette for tomato salads.
  • Try it on leafy and sturdy green salads such as lettuce varieties or kale.
  • Bean and chickpea salads.
  • Roasted vegetable salads such as eggplant and roasted pepper.
  • As a marinade for steak, poultry or fish. 
  • Sensational with meat skewers.

What is Sumac Spice?

  • Though popular in middle eastern cooking it originates from subtropical climates such as Africa and North America. 
  • It comes from the fruit of the sumac or sumach flower and is a member of the cashew family.

What Does It Taste Like and Substitutions?

  • Sumac has a deep purple-red hue with a piquant lemony flavour but is milder and a little fruitier than lemon.
  • However, you can replace it with lemon zest (1 teaspoon sumac with 2 teaspoons lemon zest).

What Does Sumac Go With?

  • A great spice to use in salads, on roasted veggies or grilled meat, poultry or fish.
  • Also great sprinkled on hummus, sprinkled on pita or in falafel. I also use it in my za’atar blend. 

Where Can I Find Sumac?

  • You will find it in the spice aisle of most supermarkets or speciality spice shops.

How Much Does It Make?

  • This recipe makes just over half a cup, approximately nine tablespoons. This is enough Vinaigrette for one salad that serves four people.

How Long Can I Store It For?

  • Your sumac vinaigrette should last approximately one week if you keep, it in a sealed glass container in the fridge. 
  • Bring it to room temperature and shake well before serving.

  • ⅓ cup olive oil
  • ¼ cup lemon juice (freshly squeezed)
  • 1 tablespoon sumac
  • ¼ teaspoon chilli powder
