WHITE PEACH FRUIT SALAD

Did you know that that peaches are considered a symbol of good luck, protection, and longevity in China? Both plums and white peaches are classed as drupes or stone fruits as they have a stone in the middle.

Ingredients and Substitutions 

  • White peaches - so much sweeter and the star of the show, can be replaced with nectarines or yellow peaches.
  • Plums - choose your favourites with over 20 varieties and a panorama of colours to choose from.
  • Mint - for its beautiful aroma you can easily replaced with basil instead.
  • Honey - for some added sweetness can easily be replaced with maple syrup to make it vegan or even a keto friendly syrup
  • Fresh lime juice - adds a delightful zing and makes a wonderful contrast to the sweetness of the fruit and honey. You can easily substitute with fresh lemon juice instead.

How to Make It

Step 1 - Prepare Your Fruit

Wash and dry your peaches.  Start at the fruit’s stem end, cut to the pit, follow the indentation and cut around the pit.

Twist both “halves” of the fruit in opposite directions, until they separate and pull apart.

With a small sharp knife prise the pit from the fruit, for stubborn pits you may need to cut around the pit to dislodge it. 

For extremely stubborn pits just slice around the pit in sections until you are able to wiggle the pit free.

Slice the fruit into wedges.

Cut around the plums.

Twist the two plum halves.

Pull the two plum halves apart.

Slice your plums into wedges.

Step 2 - Assemble Your White Peach Salad

Wash the mint, shake dry and remove the leaves from the stems. 

Place the sliced fruit, mint leaves, honey and lime juice into a large mixing bowl.

Toss the fruit with honey, lime and mint to combine.

Arrange in a platter or bowl and keep, chilled until you are ready to serve.

White Peach Salad is sensational on its own but if you’re looking to add some creaminess serve it with some double cream or crème fraîche, ice cream, whipped ricotta or yoghurt. 

Tips and Questions

Can I Make It Ahead?

This salad can be made several hours in advance and kept chilled in the fridge until ready to serve. Just add the mint and toss through just before serving.

What Can I Do With The Leftovers?

This white peach salad is still great if kept in the fridge even after a few days. 

But if you are looking to add some variety, it can be used as a topping for pancakes just dice the fruit up to use in the batter without the juices.

Or dice up the fruit and stir it through softened vanilla ice cream with some roasted nuts such as almonds and freeze to preserve enjoy at as a fruity icecream later time.

Are White Peaches Better Than Yellow?

White peaches don’t have as much acid as the yellow ones and are therefore so much sweeter. They also have a smoother texture than the yellow ones.

How to Choose White Peaches and Plums 

Look for plums and white peaches that give slightly to the touch. 

Avoid ones that are hard as they will be immature and won’t develop a good flavour.

Choose ones that are free of punctures, bruises or any signs of decay.

White peaches should be fragrant and plums will have a rich colour and a whitish bloom.

  • 500 grams white peaches (approx. 3 large, 18oz)
  • 500 grams plums (approx. 5 large, 18oz)
  • ⅓ cup mint leaves
  • 1-2 tbsps honey melted
  • ¼ cup fresh lime juice
