This is a collection of salad recipes utilising winter produce for substantial and warming salads. Just because the temperature has dropped doesn’t mean that you have to give up eating salads.
Eating seasonal produce reduces the environmental impact that farming them off-season presents. They are much tastier and are packed with much more nutrients than those grown in hothouses/greenhouses or those that have been imported. This, in turn, encourages the consumption of local produce and encourages the local farming community.
