    Substitutions and inspiration 

    We have kept this salad simple by just using strawberries - mainly because they were such a bargain at the farmers market but also, to keep things simple. 

    • You could also add any berries that take your fancy, or try adding kiwi fruit, mangoes, pineapples as they all pair beautifully here.
    • Add some fresh coconut for a tropical flavour.
    • Roasted almonds for nuttiness and crunch. 

    What are kaffir lime leaves

    Kaffir lime leaves are also known as makrut lime and Thai lime, they are a crucial ingredient in South-east Asian dishes. They have a wonderful citrusy aroma and are deep green and glossy. One leaf looks like two leaves joined together just like twins.

    Look for shiny, glossy leaves and avoid curled up and dried looking leaves. They keep well in paper or plastic in your fridge for a week and can also be frozen for up to a year.

    What can I use instead?

    They are readily available in most supermarkets in the herb part of the fruit and veg section or at your Asian green grocer.

    If you are unable to find these aromatic beauties then you can use the zest from one large lime to make up a tablespoon of zest.

    How to make it

    1START WITH THE DRESSING
    Melt the honey in a small saucepan and allow to cool slightly.
    Cut the kaffir lime leaves into ribbons chiffonade style.
    Add all the ingredients in a small glass jar and shake to combine.
    Leave to one side to allow the flavours to meld together.

    2PREP STRAWBERRIES
    First, place your strawberries in a colander and rinse well under gently running cold water, so as not to damage them. Strawberries absorb water easily so that is why it is best to wash and then hull them. Leave them in your colander to drain.
    Then hull and slice your strawberries in half.

    3ASSEMBLE SALAD
    Place your cut strawberries, dressing and shredded lime leaves in a large mixing bowl and mix well to combine.
    Keep chilled until you are ready to serve then arrange in a salad bowl.

    Can it be made ahead?

    Yes indeedy! In fact do yourself a favour and make it the day before. The flavours will meld together for an even tastier fruit salad experience.
